3 Ways to Cook... Asparagus!

3 delicious and unique things to do with asparagus! Yup spring is here :)

  • Pickled asparagus (great for cheese boards or bloody mary’s)

    • 1 small bunch asparagus

    • 3/4 C distilled vinegar

    • 1/2 tsp each: chili flakes, mustard seeds, dreid dill

    • 3-4 peppercorns

    • 1/2 tsp salt (kosher)

    • 1-2 crushed garlic cloves

    • optional 1-2 tsp sugar

  • Crisp & fresh asparagus salad

    • 1 small bunch asparagus

    • 2 tbsp olive oil, plus more as needed

    • Juice from 1/2 lemon, plus more to taste

    • Salt & pepper to taste

    • Shavings of parmesan (~1/4 cup)

  • Creamy & lemony asparagus pasta

    • 1 small bunch asparagus

    • 1/2 lb of dry fettuccini or spaghetti

    • Salt (for pasta water & to taste at the end)

    • Lemon zest (1/2 lemon)

    • 3-4 tbsp butter

    • 2-3 tbsp reserved pasta water

    • 1/2 tsp chili flakes

    • Pepper to taste

    • Grated parmesan to top
