Ratatouille (recipe & cooking demo)

Ok, ok, so summer is not technically here yet…

But it’s been pretty warm and sunny here in Seattle. We couldn’t resist making this classic French provincial dish which draws on beautiful summer veggies - tomatoes, peppers, eggplant, and summer squash.

Learn to make ratatouille with us, and you’ll want to make it all the time!

  • 1 large Eggplant, cubed

  • 1 or 2 medium Bell peppers, thin strips

  • 2 Zucchini squash, thin-ish rounds

  • 1 Onion (large), strips

  • 4-6 cloves Garlic, minced

  • 1 large Can crushed tomatoes (or 1-2 large tomatoes, diced)

  • 1-2 Bay leaf

  • Salt + Pepper To taste

  • 1/2 cup quality extra virgin olive oil, divided

  • Recommended- good crusty bread for serving
