New Recipe: Vegetarian Poke Bowl!

That’s right… we have been loving this recipe for a flavorful yet simple vegetarian poke bowl. We use tofu instead of raw fish, but feel free to play around with whatever you like (smoked salmon, boiled shrimp, or tempeh are great alternatives)!

Top Tip: Get creative when building the bowls. Have each person build their own bowls and make pretty patterns, funny faces, or a rainbow of colors!

Veggie Poke Bowl

Serves 4

Ingredients

  • 1 block firm tofu

  • 2 Tbsp sesame oil

  • ¼ cup plus 2 tbsp soy sauce

  • 1-2 Tbsp rice vinegar

  • Optional 2-3 tsp chili paste (sriracha)

  • 1 bushel green onion (cut thinly) or ½ small white onion (finely diced)

  • 1 carrot (shredded)

  • ½ cucumber (sliced into thin rounds)

  • 1 radish (shredded)

  • *Any other raw crunchy veggie you want!

  • 1 small avocado (cubed)

  • 1 lime

  • 2 cups cooked Japanese short-grain rice (1 cup raw rice 2 cups water)

  • *Optional 2 Tbsp shelled edamame

  • ½ tsp toasted sesame seeds

  • *Optional Sriracha mayo (1/4 cup mayo, 2-3 tsp sriracha)

Directions

  1. Cook rice

  2. Preheat oven to 415 F

  3. Mix sesame oil, soy sauce, vinegar, and chili paste in a small bowl

  4. Gently press and pat-dry tofu and cut into bite-sized pieces, about 12 pieces. Carefully spoon sauce over tofu to marinate. Reserve at least ⅓ of the sauce to use later.

  5. Add 2-3 tbsp of oil to a sheet tray and gently spread around. Place tofu cubes on sheet tray, careful not to pour out any remaining sauce onto sheet tray (pour remaining sauce back into sauce bowl).

  6. Place tofu chunks into oven and bake for 10 minutes. Careful turn and stir after 10 minutes and bake for 5-10 minutes longer until well browned.

  7. Meanwhile… chop veggies as described above

  8. Cut the lime in half and squeeze the juice over the avocado to prevent it from browning.

  9. Make optional sriracha mayo sauce in a small bowl

  10. To Assemble Vegan Poke Bowls: Serve the cooked rice in 2-4 large bowls. Place the bulky ingredients first, such as tofu, avocado, and any large sliced veggies. Then add the rest of the ingredients. Sprinkle sesame seeds and onions on top. Finally pour sauce and mayo over as needed! Enjoy!
